Chicken and Tomato Risoni

  • Spray oil for cooking
  • 100g chicken mince
  • 400g can diced tomatoes
  • 1 carrot, finely chopped
  • ¼ onion, chopped
  • ½ cup (60g) frozen peas
  • 2 tbsp risoni
How to make
  1. Heat a small saucepan over medium heat; add mince; cook 2-3 minutes or until just cooked through; add tomatoes, carrot, onion and peas; cover; bring to the boil and simmer 15 minutes.
  2. Meanwhile, cook risoni according to direction on packet; serve with ¼ cup chicken sauce.

Remaining chicken sauce can be placed in airtight containers and frozen for later use.
